Seared Shrimp with Apricot Zest Grill Sauce
This flavor-filled dish is ready in minutes and oh so satisfying. Serve on focaccia, as a wrap, over a salad, or skewered with colorful vegetables.
Medium or Large Shrimp - peeled, cleaned and patted dry
2 Tbs. Oil
Tait Farm Apricot Zest Grill Sauce
Greens - (arugula, spinach, shredded lettuce/cabbage) Ripe Tomatoes - (grape for salad, sliced for sandwich) Veggies - (sliced onion and peppers for grill, pickled peppers or onions for sandwich)
Pan-Seared: Heat a skillet over medium-high heat. Add oil and wait until it shimmers. Add shrimp and sear for a couple minutes on each side. Add a generous amount of the Apricot Zest Grill Sauce. Coat evenly and set aside.
Grilled: Preheat grill. Toss shrimp in oil and thread onto metal or soaked wooden skewers. Cook over medium-high heat for 2-3 minutes on each side. As they cook, begin brushing with grill sauce, turning frequently to allow sauce to caramelize but not burn. If serving on bread, open to layer with veggies before topping with shrimp. Bon AppeTait
